Banana Chocolate Chip Wontons

Banana Chocolate Chip Wontons


Preheat oven to 350° and spray cookie sheets with butter flavored cooking spray.

Mash 2 ripe bananas
Add:
6 TBS mini chocolate chips
3TBS brown sugar

Drop the banana mixture by scant teaspoon onto 24 wonton wrappers.
Brush water around edges of wrapper and then fold each into a triangle sealing the edges as you go.

Place on cookie sheet and spray the tops with butter flavored cooking spray.

Bake 10-15 minutes until golden.


Remove to wire rack and when they are almost cool, sprinkle with powdered sugar.

Fruit Squares

BASE
2 pouches of Betty Crocker Sugar Cookie Mix ( 1 Lb. 1.5 oz each)
1 c butter or margarine (softened)
1/2 tsp almond or vanilla extract
2 eggs
Heat over the 350° and grease a 9 x 13 pan. Stir base ingredients together until soft dough forms. Press half of dough in bottom of pan.

FILLING
1 (21 oz) can pie filling of your choice
Spread filling over base

TOPPING
Drop remaining dough by teaspoons over filling
Bake 45-50 minutes or until golden brown. Cook 10 minutes

GLAZE
1 c pow sugar
1 TBS milk
1/2 tsp vanilla or almond flavoring
Stir until smooth (add additional milk 1 tsp at a time if needed until thin enough to drizzle over warm bars. Cool and cut.

Potato Soup

In large pot:
  • 1 (30 oz) bag of frozen hash browns (I used Orida in little chunks-not shredded)
  • 2 small cans of chicken stock and 1 and a half cans of water
  • 1 small onion chopped
  • 2 tsp garlic powder (or fresh minced garlic if you prefer)
Bring to boil and cook 10 minutes until potatoes and onions are really tender

Reduce heat and add:
  • 2 cans cream of celery soup
  • 4 oz Velveeta cheese

Continue to heat and stir until cheese melts.

Add:

  • 1 c. of sour cream and heat through
  • diced ham (if desired)

Top with shredded cheddar cheese, crumbled bacon and chives.

Good with cornbread too!

Brownie Mix Truffles

20 ounce chocolate brownie mix (no nuts or chunks of any kind)
1 (14 oz) can sweetened condensed milk
3 heath bars crushed
powdered sugar


Put crunched up candy bars and brownie mix in bowl and mix together
Add milk a bit at a time until thick dough forms.
Roll into 1 " balls and dredge in powdered sugar, cocoa, sprinkles, coconut or dip in chocolate.

Makes 48

Better Than Whoopie Chocolate Cake

Mix up a chocolate cake mix according to the directions but bake it in a cookie sheet (the one with the little sides) for 15-20 minutes at 3:50 until done (toothpick test).

Let cake cool completely. Before serving, pierce cake with fork all over.
Pour a can of sweetened condensed milk over cake.
Top with a container of Cool Whip or whip cream.
[ Some people put crushed Heath Bars or butter brickle between the milk layer and the cool whip but I find that to be overkill. 'Sup to you...]

You can dress it up with sprinkles, nuts, shaved chocolate or whatever or serve it plain. It has been my experience that it doesn't last long enough to be admired.

Serve immediately after putting Cool Whip on.

Taco Packets

In large bowl combine:

4 medium potatoes (peeled and cubed-smallish)
1 # raw hamburger
1 can corn
1 packet taco seasoning mix

Mix well and divide onto 4-6 12" foil squares (depending on how big you want them to be)
Bake at 450° for 35 minutes.

Open carefully and top with a sprinkle of cheese and a tsp. of sour cream. Uneaten packets make great leftovers or will freeze well.

Vanilla Pudding Oat Cakes (Breakfast Cookies)

Preheat oven to 350°

Combine:
1/2 c flour
1/2 c oats (instant or regular)
1 sm. package of instant vanilla pudding (I used sugar free)
2 tbs wheat germ (if desired)

Combine
1/2 c. canned pumpkin (or applesauce or mashed banana)
1/2 c brown sugar (I used Splenda blend)
1 tsp cinnamon
I tsp baking soda
2 tbs water
2 beaten eggs

Combine both mixes together and then add one or all of the following:

1/2 c of dried fruit (cranberries, raisins or whatever)
1/2 c mini chocolate chips
1/2 c nuts (I used hazelnuts)

Sprinkle with additional sugar if you like them a little sweeter.

Drop into 12 cookies on cookie sheet and cook for 12-15 minutes.

I put them in bags of two in the freezer and they freeze and thaw well!
